Garlic Balsamic Salad Dressing

This salad dressing is amazing!  I came up with it, by default, when we were on vacation last month in Florida.  We always make our own salad dressing and love this one.  We did not want to buy all the ingredients for it and have them go to waste since we were flying home and couldn’t pack everything.

Garlic Balsamic Salad Dressing

We bought extra virgin olive oil along with lemons and garlic at the store.  When we vacation, we stock up on groceries to make our own food and then go out to eat a few times.  That way, we don’t risk eating out too often and feeling sick.  We have gluten and dairy intolerances in my family so eating at a restaurant is always a gamble.

When we were packing for our trip, we threw in a few spices as we knew we wanted to grill a few times. We had lemon pepper, salt and pepper with us.

I started to just add ingredients together to see what I could come up with.  It turned out very well. When we got home, I tried it again and added the golden balsamic vinegar we always have on hand.  It really kicked it up a notch and was perfect!

This recipe serves 2  – 3, depending on how big your salad is.  We tend to make really big salads so this recipe is good for 2.  I use all organic ingredients, even the spices.

1 tablespoon Golden Balsamic Vinegar
4 tablespoons extra virgin olive oil
2 garlic cloves, quartered
1/2 – 1 lemon squeezed
salt, pepper and lemon pepper to taste

Mix all ingredients together and let stand for an hour before serving so the garlic can infuse into the olive oil and vinegar.  I take the garlic pieces out before serving.

If you have never tried making your own salad dressing, give it a try.  The fresh ingredients make it taste so much better than store-bought dressing and is so much healthier for you.  If you take the time to read the ingredients on the back of the store-bought dressings, you will see there are a lot of chemicals and unnecessary ingredients for something that should be pure and healthy for you.
